I think it goes back to childhood. When I was growing up my parents both hated going to places like The Original Pancake House or Dennys (which is where, in my opinion, they served the absolute best pancakes!) Actually, I felt deprived that we couldnt go to fun restaurants like that. Luckily I had a grandmother who shared my passion for pancakes and fun dining so as a special treat she would take me to The Original Pancake House so I could order the famous pancake face (with whipped cream for hair, chocolate chips for the eyes and mouth and the maraschino cherry nose—does anyone remember eating that?) Anyway, pancakes and I go way back. But these days I cant get away with eating the pancake face from my childhood days anymore. All grown up now, I eat whole food big girl pancakes---made with anti-inflammatory superfoods like chia seeds or flaxseeds. Im not going to lie and say my pancakes would win a taste-test over the Original Pancake House pancake face. But, I can tell you mine do taste pretty darn good and they are jam packed with nutrients. Theyre also an easy whole foods recipe anyone can make. This particular pancake recipe is adapted from the one in my Gold Coast Cures Fitter, Firmer, Faster Program book, which called for flaxseeds. I ran out of flaxseeds so Im substituting a new superfood Ive just recently discovered---the Aztec miracle seed called Mila (distributed by Lifemax). Mila is really chia seeds that have been grown under specially optimized conditions and then cut or sliced for superior absorption and bioavailability (Note: just like with flaxseeds, the nutrients in chia seeds will pass right through you if you eat the seeds whole. Mila is already pre-ground or sliced so its super easy to absorb, but if you buy whole chia seeds just be sure to grind them yourself using a coffee grinder.) Chia seeds are considered a superfood because they are a fabulous source of anti-inflammatory omega-3 essential fats, antioxidants, phytochemicals, fiber, protein and nutrients. They are also very heat stable, great for adding to many baked good recipes and they have a very pleasant, ever so slightly nutty taste. If you cant find chia seeds then substitute ground flaxseeds (I recommend Barleans brand FortiFlax.) Heres the recipe!
